Mediterranean Quinoa Salad
This Mediterranean quinoa salad makes for a quick lunch or dinner, and it can be served as a side dish or enjoyed as a meal on its own.
- 1 cup uncooked quinoa
- 1 tsp turmeric
- 1 tsp curry powder
- 1/2 cup crumbled feta
- 1/4 cup black olives, pitted and sliced
- 1 cup cherry tomatoes
- 1 cup sliced cucumbers
- 1/4 cup fresh mint
- 1/2 tsp sea salt
- 1 tbsp olive oil
- Freshly ground black pepper
Add the turmeric and curry in the water and cook quinoa according to package directions. The spices will give that yellow tone to the dish.
Let the quinoa cool completely.
Add feta cheese, black olives, mint, tomato, and cucumber.
Add salt, pepper, and olive oil.
