This Mediterranean quinoa salad makes for a quick lunch or dinner, and it can be served as a side dish or enjoyed as a meal on its own.

  • 1 cup uncooked quinoa
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1/2 cup crumbled feta
  • 1/4 cup black olives, pitted and sliced
  • 1 cup cherry tomatoes
  • 1 cup sliced cucumbersĀ 
  • 1/4 cup fresh mintĀ 
  • 1/2 tsp sea salt
  • 1 tbsp olive oil
  • Freshly ground black pepper


  • Add the turmeric and curry in the water and cook quinoa according to package directions. The spices will give that yellow tone to the dish.
  • Let the quinoa cool completely.
  • Add feta cheese, black olives, mint, tomato, and cucumber.
  • Add salt, pepper, and olive oil.
